Super easy and super yum. No eggs in this recipe and are great with non-dairy butter

Golden Oat Biscuits (also known as ANZAC Biscuits)

  • 1 cup desiccated coconut
  • 1 cup brown sugar
  • 1 cup rolled oats (quick oats work really well)
  • 1 cup plain flour
  • 1 teas bicarb soda
  • 1/2 cup butter (125 grams)
  • 3 tabs golden syrup
  • 2 tabs water
  • preheat oven 180 C
  • combine coconut, sugar, oats, flour and bicarb
  • melt butter and golden syrup with water
  • mix into a moist dough
  • drop 1 teas of dough (about walnut sized) onto greased tray
  • bake for 15 minutes
  • cool on a wire rack
